Recipe for real Belgian waffles

Preparation

1. Prepare the waffles: In a mixer bowl with a kneading hook, put the flour, milk, cream, eggs, yeast and sugar and mix at low speed for about 10 minutes until smooth. If the dough is dry or hard add milk as needed, one teaspoon at a time.

2. Add the butter and continue kneading for 10-15 minutes, until the dough is flexible and does not stick to the sides of the bowl — making sure that the dough is not sticky.

3. Put the dough in a greased bowl, cover with a kitchen towel and let it rise for one hour. Turn the dough over and put in the fridge for another hour. Turn over again and refrigerate for at least 5 more hours.

4. Line a baking sheet with parchment paper. Add the candies to the dough and knead well. Form 10 balls from the dough, place them on the parchment paper, cover and let rise in a warm place for about 30 minutes.

5. Heat a device for waffles. Place a ball in each socket of the device and bake until golden brown in color — about 3 minutes. Repeat until the dough balls are finished.

6. Prepare the sauce: In a small saucepan with a thick bottom, bring the cream to a boil. In a heat-proof bowl, put the white chocolate and pour the hot cream over it. Wait about 1 minute until the chocolate melts, add the orange juice and the orange zest and mix. Let the cream cool and stir in the maple syrup.

7. Prepare the roasted pineapple. In a Teflon pan on a large flame melt the butter. Add the sugar and pineapple slices to it and fry until golden — about 3 minutes on each side.

8. To serve, place each waffle on a plate, place half a slice of roasted pineapple on it, pour the chocolate-orange-maple sauce and decorate with the remaining butter candies.
