In a mixer bowl with a guitar hook, beat the butter and sugar until you get a puffy and airy mixture. While whipping, add the eggs to the mixture, one at a time, and mix well after each addition. Add the vanilla essence.
In a separate bowl, sift together the flour, salt, baking soda, cinnamon, nutmeg and cloves. Also add the nuts and mix.
While stirring, gradually add the dry ingredients into the butter mixture and mix until a uniform dough is obtained. Mix in the apricots and candied orange peels, followed by the chocolate chips.
Put the dough in the refrigerator for at least an hour, or form a roll from it, wrap in wax paper and freeze overnight.
Preheat the oven to 180 degrees Celsius and line a pan with parchment paper. Place a tablespoon of the chilled dough or a slice of the frozen dough on parchment paper at a time, until the dough is finished. Bake until golden brown — about 9 minutes.
